There was a box of Kraft Stove Top stuffing mix for Turkey in the pantry and a package of leftover turkey from Thanksgiving in the freezer. So I looked at the recipes on the box and decided to go with Turkey & Stuffing Skillet, only I'm going to bake it.
1 pkg of stuffing mix
1 1/2 cups hot water
3 cups chopped turkey
1 jar turkey gravy
1 pkg frozen mixed vegetables (I used green beans, onions, green peppers, and mushrooms)
Add hot water to stuffing mix; set aside.
Cook turkey, gravy and vegetables
Top with the stuffing mix.
Put in the oven at 350 around 5 p.m. for 30 minutes, and sit down to watch Glenn Beck. Serve with fresh strawberries and blueberries for dessert.

I actually miss those leftovers. I have an elderly aunt (age 92) who lives near Laughlin, NV. We go see her and some other relatives on Thanksgiving and end up eating our Thanksgiving dinner at a local casino. It's good food, and very convenient since my aunt really can't fit everybody in her small place.
But it means no leftovers. I have fond memories of munching on leftovers after Thanksgiving at much larger family get-togethers as a child. They are were wonderful. I miss both the food and the family times.
Nice to hear from you. It's been awhile since we've visited. T-dinner at a casino. Interesting. Our leftovers were sent home with us--the best of both worlds.
